These scones were legit what dreams are made of.  Flaky, soft, and highly addictive.  I made these for a Pink Boots collab that over 15 different breweries participated in in Central Florida.  The citrus Gose goes extremely well with the orange zest and tart cranberries.  Each bite sings sweet and sour and pairs beautifully.  Scones are one of those things that if over mixed or slowly put together can go awry.  But overall, this recipe is easy and fun and gives you the perfect excuse to have a beer for breakfast.

INGREDIENTS:

  • 2 cups of all purpose flour
  • 1/3 cup of sugar
  • 2 teaspoons of baking powder
  • 1/2 teaspoon of kosher salt
  • 1/4 cup of heavy cream + 2 TBS
  • 1/4 cup of Coppertail Citrus Gose + 2 TBS*
  • 1 large egg
  • zest of one large orange
  • 1/2 cup of frozen unsalted butter, cut in pieces
  • 1 cup of dried cranberries, roughly chopped

GLAZE:

  • 1 cup sifted powdered sugar
  • 2 tablespoons Coppertail Citrus gose*
  • Zest of half an orange

INSTRUCTIONS:

  1. Preheat oven to 425 degrees.
  2. Line baking sheet with parchment paper.
  3. Whisk flour, baking powder, sugar and salt together.
  4. In measuring cup, combine 1/4 heavy cream, 1/4 beer, egg and zest.
  5. Use pastry cutter or two forks to combine butter in flour mixture until mixture looks like coarse, pea like crumbs.
  6. Fold in chopped cranberries
  7. Pour in heavy cream/beer mixture and fold until it begins to clump.
  8. Turn over onto a well floured counter and knead with floured hands until combined.  Mixture will appear to need more liquid but kneading will combine it.  If mixture is too sticky, sprinkle with more flour.  Make into ball, cut in half and pat into a circle.
  9. Cut into 8 slices, arrange on baking sheet.
  10. Mix 2 TBS of heavy cream and 2 TBS of beer and brush on top of scones.
  11. Bake at 425 for about 12-15 minutes, rotating at 6 minutes.
  12. Remove and allow to cool on rack.
  13. Let them cool completely before glaze.
  14. Glaze: mix powdered sugar, beer and zest together until smooth.  Dip each cooled scone in twice and sit on rack over pan to allow dripping.

Tip: freezing butter and working with it the least amount allows for scones not to spread as much in oven.

* If you don’t have access to Coppertail Citrus Gose, use your favorite local citrus gose!
